These healthy oatmeal cookies are soft and chewy. They are made with just 3 nutritious ingredients and don’t require any flour, eggs, or added sugar. The cookies take only a few minutes to make and are a great snack or dessert. They also store well.
I make a lot of different oatmeal cookies but this is one of my favorites to make. I love how quick and easy they are. You don’t even need a mixer to make them.

- Bananas
- Almond Butter
Oats: These cookies work with either quick oats or rolled oats. They help provide the chewy texture for the cookies.
Bananas: The cookies are naturally sweetened with bananas. Make sure to use very ripe bananas. The bananas also act as a binding agent for the oats and will soften the oats.
Almond Butter: This recipe uses unsweetened natural almond butter. This is almond butter that only has almonds in the ingredient list. The almond butter adds to the chewy texture, helps bind the cookies, adds flavor and provides some added fat to the cookies. Almond butter can be substituted with natural peanut butter or sunflower seed butter.
How to Make Chewy Oatmeal Cookies
The bananas are mashed and then mixed with the almond butter. The oats are then stirred in. The cookie dough is then ready to be scooped out and placed onto a baking pan. The cookies need only about ten minutes to bake.
Cookie Sweetness and Texture
These oatmeal cookies have a soft and chewy texture. They have some natural sweetness from the bananas. I think the sweetness level is just fine, but if you prefer sweeter you can add chocolate chips, dried fruit or other similar mix-ins. I also have a chewy oatmeal cookie recipe that uses dates instead of bananas and is sweeter than this banana version.

Ingredients
- 1/2 cup (116 g) mashed very ripe bananas approximately 1 1/2 bananas
- 3 tbsp (48 g) unsweetened natural almond butter
- 1 cup (88 g) quick oats or rolled oats
Instructions
Preheat oven to 350°F (177°C). Line a large cookie sheet with parchment paper or silicone baking mat.
In a large bowl add mashed bananas and almond butter. Whisk until they are thoroughly combined. Add in oats. Stir until the oats are evenly mixed and fully coated. Your cookie dough should look more like a thick wet batter rather than traditional cookie dough.
Use a 1.5 tbsp cookie scoop to scoop out cookie dough. Release cookie dough onto the prepared baking sheet, spacing the dough balls about 1.5 inches apart. Use the palm of your hand or the back of a metal spoon to press down on each cookie dough ball so that it forms a thick round disk. Smooth the sides of the cookie disks if desired. The cookies will not spread during baking so you want to shape the cookies to how you want the final product to be.
Bake cookies for about 10 minutes or until set. When cookies are done, they should not stick to the pan. Let cookies cool completely before removing them from the baking sheet with a cookie spatula.
Notes
- Make sure to thoroughly mash your bananas. You should not have any large chunks. I recommend using a whisk to mash instead of a fork.
- Uneaten cookies should be stored in an airtight container in the fridge or freezer.

- If you make these cookies with rolled oats, you will only have enough for 9 cookies instead of 10.
- The cookies are sweet but not super sweet. If you want them sweeter, you can add chocolate chips, dried fruit or other mix-ins.

1/4 cup of mix ins will work, so if you want to add both pecans and raisins, we suggest adding 2 tablespoons of each.

This is now a go to.. I follow Whole30 but use these for a treat. I’ve added chia seeds, sunflower seeds, dark chocolate chips and dried cranberries as well. All mix very well.
